Quinoa Fiesta Enchilada Bake

Thai Peanut Chicken Tacos

Orange-Dill  Talapia  and Roasted Mushroom and Arugula Salad (omit cheese and note the recipe is for 8 servings, so make adjustments also any type of mushroom will do)

Greek Chicken
 (I also add marjaram)  and Greek orzo salad (omit feta and add chopped cucumber)Sesame Udon Noodles with Tofu and Veggies
